Lamb Shank Cassoulet

Ingredients:

  • 4 lamb shanks
  • 400g dried white beans
  • 2 carrots, cut into rounds
  • 2 onions, chopped
  • 2 cloves garlic, minced
  • 2 bay leaves
  • Fresh thyme sprigs
  • 2 Toulouse sausages (optional)
  • 1 bouquet garni
  • 25cl dry white wine
  • 1 liter vegetable broth
  • Salt, freshly ground black pepper
  • Olive oil
